Why the pig?


1. Three expats and a smoker
The joint was opened by an American, Australian and French trio who brought real-deal American BBQ to Saigon: low and slow over charcoal, house-made Kansas City sauce, and the name Ụt Ụt — Vietnamese for oink-oink.
2. Lucille and the cashew smoke
The smoker is named Lucille. Instead of Texas oak or hickory, the house burns fragrant dried cashew-fruit tops from Vietnam — three hits of smoke, 3 to 4 hours. Chicken gets smoked with jackfruit wood, just as fragrant.
3. The ribbone — fall-off-the-bone proof
The house ritual: four clean-picked rib bones held up like a trophy. St Louis ribs smoked until you don't need cutlery — that's the promise of every rack out of Lucille.
4. Beer, neon and a rubber chicken
The place is a proper beer garden: a craft-beer tap wall, the red neon pig sign, communal picnic tables by the Ben Nghe canal. And a rubber chicken dangling over the bar — because nobody here stays serious for long.
