Lucille's fire is burning — fall-off-the-bone ribs
Low-and-slow smoked meats over charcoal, fragrant cashew-fruit-top smoke, chicken kissed with jackfruit wood. Ụt Ụt is Vietnamese for "oink oink" — this is the American pig joint of Saigon.
Meet Lucille

The house smoker has a name: Lucille. Every batch passes through three hits of smoke from fragrant dried cashew-fruit tops — sweet, complex, aromatic — for 3 to 4 hours, until the smoke color sets deep into the meat.
St Louis ribs smoked low and slow until they fall off the bone — the proof is four clean-picked bones held up like a trophy. Chicken is smoked with fragrant jackfruit wood, belly slow-roasted for crisp crackling.
