Three generations, one broth pot. Phở Minh has cooked phở since 1945, carrying a northern recipe through all of Saigon's changes — clear broth, fragrant with bone, never harshly sweet.

Wooden tables and chairs, mint-plaster walls, the wall clock: the house keeps everything it always had. Michelin has awarded the Bib Gourmand four years running (2023–2026), and the house hangs them neatly on the kitchen shelf — like household things.

The bowl here is deliberately smaller than elsewhere. Eat just enough, let the broth be the main character, then stand up — exactly as a breakfast should be.
