The night counter

Omakase K (おまかせK) is an intimate chef's counter on Nguyễn Siêu — one room, one counter, the chef's hand. Uni, mantis shrimp, shirako. No printed menu: the evening is written at the counter.

The rhythm

The evening, by pass

No printed menu exists — the night is written at the counter, pass by pass, the way the fish arrived.

The opening bite
A small, sharp beginning — the night's first hand.
The season's neta
The day's fish, cut as it was landed.
The counter's signatures
Uni, mantis shrimp, shirako — the kitchen's known trio.
The quiet closing
One last thing, then the room lets go.
The chef at work behind the counter — glowing glass-block wall, hinoki wood
The shokunin behind the counter
The shokunin

The hand, not the room

The chef works against a glowing glass-block wall — pale hinoki, knives, the cut. The room is half timber, half shadow; nothing in it competes with what's handed over.
