Nihaoniu brought Saigon a very Teochew way of eating hotpot: fresh beef sliced thin at the counter, in front of diners, then dipped for exactly 10 seconds in a crystal-clear broth. No fancy broth needed — the beef is the main character.
And there is one indispensable ritual: the DIY satay bar. Satay, cilantro, scallion, fried garlic — everyone mixes their own dipping bowl. As they say in-house: great beef needs great satay.
The beef-cut chart on the facade isn't decoration — it is the menu.
