A whirlwind from Hakata

一風堂 — IPPUDO — means 'a whirlwind': the gust that has carried Hakata tonkotsu from one Fukuoka shop in 1985 to the world. This is its District 1 chapter.

It started in 1985, in Hakata, Fukuoka — one shop, one founder, Shigemi Kawahara, and a tonkotsu broth he refused to rush. Kawahara went on to win Japan's TV Champion noodle title three years running and be crowned the 'Noodle King.' The whirlwind had a name: 一風堂.

The signature red IPPUDO bowl — tonkotsu broth, chashu, black garlic oil, noodles lifted through steam
The red bowl — eighteen hours, served steaming

The ritual never changed: pork bones simmered eighteen hours until the broth turns milky white, noodles pulled fresh every day, the bite set by you — soft to kata-men. Shiromaru keeps the 1985 original; Akamaru answers with black garlic oil and spicy miso.

47 Tôn Thất Thiệp — the whirlwind's D1 address

On Tôn Thất Thiệp, the whirlwind wears a wooden-slat facade with the 一風堂 kanji glowing over the street. Inside: the red bowls, the open counter, the shout of 'Irasshaimase!', steam rising off every table. Saigon's chapter is written in tonkotsu.
