Ichitori’s story isn’t long — the house opened in 09/2024. The story is in the name.
一鳥 — “one bird”. Where many Japanese houses spread across hundreds of dishes, Ichitori goes deep on a single ingredient: the chicken, broken down cut by cut — tendon, guts, breast, thigh, wing — each cut its own skewer, its own grill.
The house is a Wonder Kitchen branch — the same group as Wakaba and Futaba — run by Japanese operators. No decades-long heritage story here; instead the precision of the craft: white charcoal, hand-turned skewers, clearly listed prices.
