The counter curves like a crescent — eighteen seats wrapped around a copper column, glass on every side, Saigon spread out below. When night falls the room goes dark and the city does the decorating.

The rice is black — kuro-shari, black vinegar folded into binchotan-cooked grains. The bluefin is dry-aged in-house. Underneath the whole evening runs fermentation: time, salt, and patience as ingredients.

SABI is 錆 — rust, the patina copper takes with age. Like the copper column at the center of the counter, the kitchen treats time as a finish: nothing rushed, everything patinated.
