Pho Thin was born at 13 Lo Duc street, Hanoi — with a tai-lan pho unlike any other shop of its time.

Instead of blanching beef in broth, Mr. Thin flash-seared it in a red-hot cast-iron wok — half-raw, half-seared, smoky. The dish became a legend.
