Pho Thanh Binh doesn't sell all day. It opens at dawn for the morning crowd, takes a midday nap, then reopens until 23:30 for Saigon's late-night eaters. Two shifts, two kinds of light, one bowl of pho — deep amber broth, star anise and cinnamon up front, unchanged for 30+ years.
The shop's 24-hour day
Gold is the morning shift, grey the midday nap, night the evening shift — the nap is the shop's rhythm, not a closure.
Start the day with a hot bowl of pho
At six in the morning the pho cart is already fired up by the door, red plastic stools lined neatly around the steel tables. This shift eats fast and orders tight — a 60k regular, extra herbs, a squeeze of lime, done in fifteen minutes. The morning shift belongs to Da Kao's working crowd.
Late-night eating until half past eleven
At half past one the shop reopens, and doesn't close until 23:30. While most District 1 pho shops have packed up by eight or nine in the evening, here the lights stay on and the pot keeps boiling. The evening broth has simmered all day — richest, fullest, the star anise and cinnamon clearest. The evening shift is the longest — and the rarest in D1.
