Since 1958, alley 288 Nam Ky Khoi Nghia has been packed from 5 AM: the teal shutter + red "QUÁN PHỞ DẬU" sign, plastic stools spilling into the alley.

Northern roots: the pickled-onion plate
Pho Dau keeps the northern custom: NO raw herbs — only the signature pickled-onion plate. Clean taste, none of the southern sweetness.

Shutter down at 1 PM — done
Nearly 70 years, a single shift: up before dawn, down at 1 PM. Come late and it’s gone — there is no afternoon shift.
Come in the morning — not the afternoon
Mornings only. After 13:00 the shutter is down — don’t come in the afternoon.
