Story

From Hanoi to Saigon, with the bamboo steamer

Oc Luoc Ha Nguyen started from the Hanoi way of eating snails: a simple boil, fragrant lemongrass and ginger, a hand-mixed ginger fish sauce — then carried that whole bamboo steamer into an alley off Tran Nhat Duat.

Story The dish

Boiled snails, ginger fish sauce

The Hanoi way of eating snails is deliberately plain: boil them with lemongrass and ginger, then let a hand-mixed ginger fish sauce do the talking.

Story The journey

Hanoi flavor, finding Saigon

The house grew the way good quán do — one Hanoi steamer at a time, from Lữ Gia to Cityland and now Tran Nhat Duat in Tan Dinh.

Story The kitchen

Always steaming

The kitchen barely rests: baskets stacked, steam rising, every order timed so the snails arrive still singing.

Boiled snails are best still steaming — lemongrass, ginger and fish sauce are three friends you cannot separate.Oc Luoc Ha Nguyen
