The Invention
When milk ran scarce, Nguyễn Văn Giảng — bartender at the Metropole — did what inventors do: he reached for the egg. Whisked into silk, folded into coffee, a legend was born. Eighty years later, Eggyolk carries that Hanoi invention to Saigon.
