DORAN DORAN
Every table has a round grill built into its center. Sizzling meat at the heart, banchan ringed around it — the whole meal turns around the fire, the Korean way.
Four steps around the fire
The grill sits at the center of the table — meat at the heart, banchan around it, ssam wrapped the right way.
Pick the meat
Pork belly, brisket, marinated galbi — meat trays set beside the grill, cut for wrapping.
Grill at the table
Lay it on the built-in round grill, turn it steadily — the exhaust hood takes care of the smoke.
Wrap the ssam
Lettuce + perilla leaf, garlic, kimchi, one hot slice of meat.
Dip & eat
Ssamjang or sesame oil with salt — one bite, the full flavor.
