The story

The Tám Riêu kitchen

Tám Riêu is a tidy bún riêu kitchen on Ly Chinh Thang street, District 3. The kitchen keeps a short, sure-handed line: crab-red broth slow-cooked every morning, leaf-wrapped bánh bột lọc, chả giò fried crisp to order, and a lẩu riêu pot for the whole table. No big signboard, no glossy menu — just crab aroma, steam off the pot, and the red-gold bowl.
