The Cô Thủy alley quán

Cô Thủy began as a small quán in the 287/66 Nguyễn Đình Chiểu alley, District 3 — the kitchen cooks one pot of crab-and-snail bún riêu a day: square-cut crab rieu, chewy snails, blood, tofu heaped in a clear sour broth. No big signboard, no glossy menu: just broth steam rising in the alley.
