The story

Cô Hương Béo

Cô Hương Béo began in a Hanoi kitchen that believes good bún riêu needs crispy tóp mỡ and a broth gently soured with dấm bỗng. Béo — rich and chubby — is the affectionate name the regulars gave: rich, crisp, unforgettable after one bowl. Now the quán runs two branches on the same Nguyen Thi Minh Khai street, open daily 06:30–21:30.

THE CRACKLINGS

Crispness is the craft

Pork fat crisped golden every day — scattered over the bowl, a crackle is the sign.
