An omakase ritual, once each night
Sushi Shinkon opens for a single seating each night — 18:00 to 22:00 — where every piece of fish is set before you like a private rite, under the gold light of the crane wall.

The door opens once a day
By day, Shinkon is silent. At 18:00 the gold lights rise, the hinoki counter warms — and the night's omakase begins.
The crane wall
A golden crane on an ink field
The room's anchor is a gold-leaf crane against deep charcoal — the wish for a thousand years of luck, watching over a single warm hinoki counter.
