21-day dry-aged beef, finished over wood fire.
The foundation of the whole house: beef dry-aged for 21 days, then grilled over wood — charred outside, rosy within. In the photo: the plated steak on stoneware with its brass sauce pot, greens and pickled radish — the grill's marks stamped into every cut.
What the photos actually show.
Said plainly: the venue publishes no merchant menu we could copy faithfully — an owner post mentions a Set Lunch but lists no dishes or prices — so we record only what the real photo set shows: oysters to open, grilled octopus, and steak with fries.

Oysters to open
The steakhouse opening: raw oysters, lemon and a glass of white.

Grilled octopus
Octopus off the same fire, with nutty chickpeas, basil and golden purée — the seafood plate in a meat house.

Steak frites
Rosy sliced steak, thick golden fries, crispy-shallot salad and the herb sauce pot.
Four things Stoker is.
Four things that make the spot — all visible in the venue's and diners' photos.
A lap around the room.
Six real photos — the leather-and-antler dining room, the long private table, oysters on the half shell, the plated steak, grilled octopus, and steak frites.
