The cart's story

Three chapters of a sidewalk pho cart: the glass cabinet, the two-step order, and a pho shift that runs till late night.

The cabinet

Cabinet no. 07

Neat rows of beef balls, dangling hooks of tendon, stacks of blue-floral bowls beside them. Choosing your topping by eye is faster than reading the board — this is the shop's real menu.

Red letters on glass

The red PHỞ BÒ VIÊN THẬP CẨM letters on the cabinet glass, house number 07 on the wall above. Spotted from far — and a promise: that exact dish, exactly those six things in the thập cẩm bowl.

The night shift

Pho till 23:00

The cart's lamp burns from midday to 23:00 daily — a rare late-night pho hour on District 1's streets. Steel tables, plastic stools, facing the old wooden-shuttered shophouses.

The thập cẩm here isn’t "a bit of everything" — it’s a texture collection: every piece in the bowl chews differently.Tasting notes · specimen plate no. 07
