Beef balls
The cabinet's most famous specimen: firm beef balls that bounce back when bitten, flecked with chewy minced tendon inside. Eat one on its own before stirring the bowl.
Tendon
Hung on the cart's hooks until bowl time. Braised just right: it yields to the teeth without falling apart — every bit as gelatinous as promised.
Heart
Thick slices of deep-red heart, dusted with ground pepper. The deep sweetness of fresh offal — the heaviest hitter of the six specimens.
Tongue
Sliced thin with fine marbling and a light richness. The softest piece in the bowl — eat it between the chewy pieces to change the rhythm.
Honeycomb tripe
Ivory honeycomb tripe, crunchy and crisp. The perfect contrast to the soft pieces around it — don't skip it.
Book tripe
The collection's final piece: lightly chewy with beef's signature aroma. All six together complete one full texture circuit.
