Since 2018, the hummingbird flies backwards

The Hummingbird began in 2018 with three friends who loved specialty coffee, led by Trần Bá Hòa — a CQI Q Grader who studied roasting in Korea and Australia and spent years judging the Vietnam National Barista Competition.

It started as a small corner on the rooftop of an old apartment block at 5H Tôn Đức Thắng, District 1. In 2019 the team moved into a 1950s French colonial villa tucked down a Võ Thị Sáu alley — keeping the original structure, tearing up raised floors to reveal the original patterned-tile (gạch bông) floors.

Since 2021 the compound has held one café and one roastery — Blue in Green — at the same address. Coffee from Vietnam, Ethiopia and Kenya is roasted in-house on a Probat.

The pastries in the glass case are homemade — baked by the founder's wife. And the name? The hummingbird is the only bird that can fly backwards — the founders' metaphor for flying back through the commercial coffee supply chain to study origin, variety and processing.

Why a hummingbird?

The hummingbird flaps its wings up to 70 times a second — and is the only bird that can fly backwards.

The founders made it their metaphor: flying back through the commercial coffee supply chain to study origin, variety and processing — then roasting and brewing on this very compound.
