At 62 Ton That Thiep hangs a sun-faded painted sign: 'THANH XUAN — Special: My Tho Hu Tieu'. Below it runs a long tiled corridor lined with tube lights, steel tables, and a glass topping cabinet. A fixed storefront with indoor seating — not a cart.

My Tho hu tieu is southern-sweet: clear broth, sweet from bones and dried shrimp, thin springy noodles. At Thanh Xuan most order the dry bowl — noodles tossed in savory sauce, fresh shrimp, crab meat, minced pork, quail egg, blood cake — with a separate bowl of broth for sipping. The house menu lists just five bowls: shrimp 75k, squid 80k, crab with pork hock or spare ribs 85k, crab 90k; each in dry or soup.

The shop sells mornings only, 6 AM to 1:30 PM, closed Mondays. Customers come early, eat fast, head to work — the rhythm of a Saigon breakfast joint. Every photo on this page was taken by a guest.
