The Cô Dung field-crab workshop

The Cô Dung family has run a field-crab depot for 30 years — crab from the paddy to the kitchen the same day, ground by hand every morning, beaten fluffy before opening. The bún riêu's deep sweetness is the whole family's craft: no filler, no farmed crab, only pure field crab. With the bánh đa cua and the ốc bươu in gingery fish sauce, the field-crab meal is complete.
