Every Half Coffee Roasters — Pasteur is a specialty coffee roastery at 34 Pasteur, Ben Nghe, District 1, founded in 2016 by Trần Lê Minh Trúc on the philosophy that “every half bean has its soul mate”. A pioneer of Vietnam's specialty coffee movement, it roasts local arabica, fine robusta and rare liberica from Dien Bien, Pleiku, Lam Dong, Dak Lak and Buon Ma Thuot in-house. Signatures include Citrus Punch, Coconut Blossom and Nitro cold brews, Tet Blend V60 and classic espresso; menu 55,000–90,000đ. Calm, plant-filled, with fast WiFi and outlets — a remote-work favorite. Open daily 7:00 AM–9:30 PM.
