Finding The Workshop is the first test. The entrance at 27 Ngô Đức Kế is a nondescript door guarded by two statues, marked only by a small die-cut metal sign. No big branding, no sidewalk touting. Discovery is part of the deal — and honestly, it's the best filter. The people who find it are the people who should be here.
Then you climb a hundred-year-old staircase, and light spills from the top floor.
The main hall is a cathedral: exposed black steel trusses, rows of enamel dome pendants glowing warm, long communal timber-slab tables, brick walls. It's the defining image, and it earns it. The copper-fronted central bar is theater-in-the-round — espresso machine, pour-over stations, glassware rows, staff in mahogany aprons, dark shirts like craftsman's workwear. Everything worth watching happens here. The guest quotes say the central bar is "a fantastic spot to watch the skilled baristas in action," and they're right. Sit at the bar. Watch.
The menu reads like a lab sheet: origins, altitudes, harvest dates, farmer names, TDS and pH-filtered water. V60, Chemex, syphon, cold-drip towers lined up like instruments. Precision as decoration. This is the "laboratory, not café" half of the identity, and it's not posturing — the baristas know their chemistry, and the menu is info-dense, origin-proud, zero fluff. English first, Vietnamese alongside.
But here's the practical part, because I always do the practical part: the long shared tables have power boards and wifi, and the room hums with laptops until evening — "the sound of typing, the coffee machine, people talking and the smell of coffee." It's Saigon's de-facto office. The review quotes say it best: "If you want to work, go to the Workshop… If you don't know what you want, go to the Workshop then you get some ideas!"
The salted iced coffee is excellent. The Cococha is "uniquely Southeast Asian," whatever that means, and I mean it as praise. The colonial windows pour treetop daylight over the bar by day; the dome pendants take over by evening. Daylight first, warm factory glow second.
Logistics: 8:00 AM to 8:30 PM daily. Go early for the treetop light; stay for the dome glow. Budget for specialty prices — this is not a 25k cà phê sữa đá situation, and it never pretends to be.
The staircase is the price of admission. Worth it. Every time.
