Phở Thìn does something most phở shops don't: it puts the beef in a screaming-hot wok BEFORE the broth. Tái lăn — the meat gets seared with a mountain of chopped scallions, char edges and all, then the soup goes over. This is not gently poached beef. This is cooked with fire. The char on the brisket and the pepper dust tell you everything before the first spoonful.

The shop is at 113 Nguyễn Thái Bình, but the sign still says "(110 LÊ THỊ HỒNG GẤM)" — the old address, never updated after the move. I love this. A Hanoi lineage that won't fix its own sign because the history matters more than the branding. The board says to carry the old-address note openly, not hide it. Lineage before branding. That's the whole place in one detail.

The broth is northern-style: deep amber-brown, dark, smoky, cracked black pepper scattered on top, translucent tendon chunks. It is the opposite of southern sweet-clear phở, and it makes no apology. The broth is the argument against the southern style — deep, dark, smoky — and it wins the argument, at least with me.

Every bowl arrives in the same blue-white Chinese-style porcelain with the heavy cobalt rim. The signature move is visible in every bowl photo: seared beef under a huge pile of chopped scallion, then a second handful over the top. Green on dark broth.

The scallion isn't a garnish here; it's the identity — the loudest color on any plate, the thing you recognize the shop by.

The wall banner is a cheap yellow print with the menu in bold black: "PHỞ BÒ / TÁI 60K / TÁI LĂN 80K / TÔ EM BÉ 40K." Nothing precious. The house wifi is 113PHOTHIN. Wall fans spin over wooden chairs under cool ceiling LEDs; the front opens fully to the street. Bright, busy, zero theatre.

Prices run 25–60k. They open 6 AM to 11 PM — seventeen hours exactly. There's even a golden chicken phở, the only light-broth dish in the house, for people who don't do beef.

I'm a central girl — bún bò is my mother tongue. But I respect a shop that knows exactly what it is. Dark broth, wok fire, scallion mountain, honest prices, an un-fixed sign.

Phở Thìn isn't trying to be everything. It's trying to be this, and it is.
