The Grill Line Is the Review

Ebisu Bangai does not try to be pretty. It tries to be exact.

You see the noren first — tall, orange-red, えびす EBISU BANGAI YAKITORI & GYOZA burning against a dark tower on Tôn Đức Thắng, readable from a block away at dusk. That banner is the whole brand: no cute mascot, no neon poetry. A statement of inventory.

Inside, the seating obeys a single logic: red-lacquer tables set behind open-work kōshi lattice screens. The screens do the work of walls without the weight of walls — you see silhouettes, hear charcoal, never feel exposed. Someone here understands sight lines. The grill line glows behind the first-floor counter, open to the room, which means the kitchen has no alibi. I respect that.

A restaurant that hides its grill is telling you something. This one shows you everything.

The menu opens with gyoza. Not a garnish — the opening argument. Handmade varieties: the default, the gara-daki nabe gyoza served in a black donabe of chicken-stock pot, the ebi gyoza. Only then, yakitori. This is the longest-running Tokyo yakitori house in the city, and it still leads with the dumpling. That's not a quirk; it's a hierarchy of what they trust most.

One more detail, because it's the kind of thing I check: the drink page prints prices excluding tax, with a note in three languages — prices above do not include tax. Most places bury this. Ebisu Bangai puts it on the page you stare at longest. Honesty as house style.

What stays with me is the sequencing. Gyoza first, yakitori second, charcoal always. There's a confidence in a kitchen that opens its menu with the thing it makes by hand and lets the grill be the second act rather than the headline. The grill line is long and open and you can watch every skewer turn — no theater curtain, no pass window. In a city where plenty of kitchens perform openness while hiding the work, this one just does the work where you can see it.

Good to know

23B Tôn Đức Thắng, Bến Nghé, Q1. Weekdays 17:00–23:30, weekends 11:30–22:30 — it's a night place, treat it like one.

Judgment, final: the charcoal is the review. The red tables, the lattice, the noren — all correct set dressing. But the glow behind the counter is what you're here for, and it doesn't flicker.
