There are over two hundred % Arabica stores in the world. I have been to eleven of them. Every single one is white — white walls, white bar, white light, the coffee bags the only color in the room. <Quote>

Except one.

Room 41, fourth floor, 42 Nguyễn Huệ. Saigon's Cafe Apartments. The one store where Kenneth Shoji let someone else touch the white.

I climbed it on a Tuesday morning. Nine floors of the old apartment block — or the pay elevator, which creaks in a way that makes you glad you chose the stairs. Past the tailor shops and the other cafés, past nine floors of competing signs, and then the white % glowing on a fourth-floor balcony like a lantern. The pilgrimage matters. By the time you arrive, you have earned the cup.

French studio ciguë did what no one else was allowed to do: they warmed it up. Bamboo cabinetry. Edison pendants. Woven-mat floors. The white espresso bar is still there, the grid-tile backsplash still there, the neon % still glowing on white tile. But the room breathes differently — wood softens the geometry, and the whole place feels like someone's very deliberate home rather than a temple.

I ordered the Kyoto latte. It was exactly what it should be — which, at % Arabica, is the entire point. The brand's promise is consistency across continents; the Saigon store keeps that promise while quietly breaking the aesthetic rulebook. That tension is the whole visit.

What the white discipline gives you, once you stop noticing it, is attention. With nothing to look at except the cup, you look at the cup. The latte art holds. The milk is textured to the point where it feels structural. This is coffee as industrial design — every variable controlled, every cup a repeatable object. Some people find that cold. I find it honest. The brand never pretends to be something it isn't.

From the balcony, Nguyễn Huệ stretches below — the walking street, the motorbikes held back at the barricades, City Hall at the far end. At night the whole block glows like an advent calendar, one lit window after another. I stayed until the light changed.

Shoji chose this building himself. Not a mall, not a new development — a 1960s apartment block with rust-stained balconies and peeling concrete. He understood something: <Quote>

Go on a weekday morning if you want the room to yourself. Go on a weekend night if you want the balcony at its best, the walking street lit up below and the % glowing above it. Either way, take the stairs. The climb is part of the cup — and the white, for once, feels earned. Nine floors up, the city finally quiet enough to hear yourself think.
