Phở Minh opens at 6:30 in the morning and closes at 10:30. Four hours. That's the whole business day, and it has been the whole business day since 1945 — three generations, one alley off Pasteur, the same wooden block letters spelling PHỞ MINH on the facade since before 1975.

You have to go down the alley to find it: striped awning, climbing vines, a small sign with the hours. Inside, the walls are mint green, the tile wainscoting is white, the dark wooden tables are numbered, and a vintage clock ticks on the wall. Nothing has been redecorated. Nothing needs to be. The room is the archive.

The bowl is small. This matters. In a city of ever-larger portions, Phở Minh serves a modest white porcelain bowl — clear northern-style broth, pink tái slices, scallion, onion — with sliced green chili, bean sprouts, and herbs on the side. No bò viên; the menu is six items, take it or leave it. The table card reads "PHỞ MINH PASTEUR since 1945," bilingual, numbered, 75,000 for the regular bowl and 100,000 for the large. Plain. Final.

And then there's the red plaque on the kitchen shelf: Michelin Bib Gourmand, 2023, 2024, 2025, 2026. Four years running, displayed the way you'd display a family photo — present, unceremonious, not a shrine. I have strong feelings about what Michelin recognition does to old shops; usually it ruins them. Here it hasn't, because the shop's discipline is older than the award. Four hours a day. Six items. Small bowls. The discipline is the brand.

The bowl itself is worth studying. Northern phở is a different philosophy from the southern style most visitors know: the broth must be clear — trong veo — which takes longer and shows more. There's nowhere to hide in a clear broth. No sweetness to mask thin stock, no heavy spicing to cover shortcuts. What you taste is time and bones and patience. The tái slices were pink and tender, the scallions sharp, the little dish of sliced green chili on the side exactly as it should be. I ate slowly, which felt right in a room where everything else has been done slowly for eighty years.

I arrived at 7:15 and the room was full but quiet, the ceiling fans turning, morning light slanting down the alley. I thought about the noodle migrations — how phở came south, how it changed, how some houses refused to change with it.

Phở Minh is a refusal made delicious.

Eighty years, four hours a day, and the broth is still clear. Some stories don't need a new chapter. They just need to keep being told, every morning, until 10:30.

The table card says it all, really: PHỞ MINH PASTEUR, since 1945, six items numbered in two languages, 75 and 100 thousand đồng, extra meat or egg or patechaud if you must. No website voice. No story about passion. Just the facts, on cream card stock, at every table. I've read a thousand menus in my work, and the confident ones are always the short ones. This is the shortest confident menu in Saigon.

Four hours, six items, eighty years. If you sleep in, you miss it. That's not a flaw. That's the entire philosophy.
