167-169 Calmette. A narrow facade, a red awning, gold enamel letters spelling MAISON SAIGON MAROU, and a vertical blade sign reading SÔ CÔ LA. Outdoor stools spill onto the street. It presents as a Parisian corner shop — and then you walk inside and realize the corner shop is also the factory.

Maison Marou is Vietnam's first bean-to-bar chocolate maker, founded 2011 by Samuel Maruta and Vincent Mourou. The Calmette flagship compresses the entire operation into one room: marble retail counters, the wall of colorful single-origin wrappers, red-and-blue slat-board menu walls with letter tiles, and — behind glass, by the tall facade — the cacao roaster itself. French shopfront theatre, with the machine that makes it all visible through the window.

The spatial sequence is worth diagramming. Threshold: the red awning and mint-green frames, gold SÔ CÔ LA hand-lettering on the glass, the brass plaque by the door. Then the retail room — marble counters, stacked gift boxes, the chocolate-bar wall as a color field. Then the café depth — garland banners strung across on busy days, the glass-fronted pastry kitchen, the roaster humming behind its partition. Production, retail, and consumption in a single sightline. Most "experiential retail" has to fake this. Marou just removed the walls.

The brand system is a study in restraint: the MAROU cartouche — gold serif "FAISEURS DE CHOCOLAT" on black — repeated at every scale from the enamel sign to the wrapper. The menu boards are the most honest typography in the building: red-and-blue letter tiles on slatted wood. HOT CHOCO 115. SIG MAROU 100. TIRAMISU 150. Letterpress voice, prices included, no decoration required.

And the chocolate itself carries the architecture's argument. Every bar is single-origin from six southern provinces — Tiền Giang, Bến Tre, Bà Rịa, Đồng Nai, Lâm Đồng, Đắk Lắk. The 2016 Tiền Giang 70% was named World's Best Chocolate Bar at the International Chocolate Awards. The Signature iced chocolate (molten, 100k) is the cult order; its bolder bitter brother and the chilli hot chocolate complete the trio. The dine-in-only tiramisu (150k) is worth planning around.

Taste the six origins side by side and the room's thesis becomes edible: same maker, same craft, six different landscapes. The Tiền Giang is the award-winner — deep, structured. The Bến Tre carries the coconut coast in its finish. This is terroir, Vietnamese, in chocolate form, and the colorful wrapper wall is the map.

"We buy directly from Vietnamese farmers at premium prices." Pure ingredients, no palm oil, small batches crafted in Saigon. <Quote>

The ethics are structural, not decorative — like everything else in this room.

Mon–Thu 9:00–22:00, Fri–Sun till 22:30. Stand at the window, watch the roaster turn, and eat the thing it made. <Quote>

The building explains itself — and the chocolate finishes the sentence, in six single-origin paragraphs.

</Quote> Come hungry; the tiramisu is dine-in only for a reason. And take a bar home — the wrapper wall is a menu in itself.
