At Cao Vân there is no “indoor or outdoor” — the sidewalk is the shop. At 5:30 AM the stainless tables are out, the open kitchen is roaring, and the smell of broth mingles with Da Kao waking up.

Red plastic stools, stainless tables — Sit low, eat fast, face the street. Nobody rushes you away.
Open kitchen — From your seat you can see the broth pot, the meat being sliced, the bowls coming out.
Self-serve herbs — Basil, lime, chili, bean sprouts on stainless trays; chopsticks and chili sauce within reach.
