The team behind House of Merlin opened a second house on the third floor above Nguyen Thi Minh Khai — this one built around an irori hearth, Japanese whisky, and late nights with piano.
Chapter 02
Nhut behind the counter
Head bartender Nhut runs the counter: single-cask Chichibu tops the house pride, and his two signatures — Lullaby of Life and The Blue Hour — are the names guests repeat.
Chapter 03
Whisky, then piano
The bar runs daily to 1 AM, and the later it gets the more the room slows around the piano. That is Irori's rhythm: whisky first, music after, no hour hurried.
