The Fermentation Wall

Every glass starts in a jar

The bar runs on fermentation: fruit, tea and herbs are fermented in-house, clarified until clear, and only then poured.

  1. Ferment

Fruit, tea and herbs ferment slowly in-house — the base note of every cocktail.

  2. Clarify

Mixtures are clarified until water-clear, keeping the depth of the ferment.

  3. Pour

Poured at the stone counter with a minimal garnish — finished right in front of the guest.
