STORY

A coconut in every plate

Com Tam Cot Dua is named for what makes it: rice cooked in coconut water, a piece of coconut flesh alongside, the banana-leaf plate. No plain-water rice here — the coconut's sweetness runs from the rice cooker to the side piece.

COCONUT WATER

The rice cooks in coconut water instead of plain water — fragrant, sticky, rich yet light.

COCONUT FLESH

The coconut flesh on the side

A piece of coconut flesh beside the plate — clean, sweet, crisp against the salty ribs.

BANANA LEAF

The banana-leaf plate

The rice plate lined with banana leaf — its faint scent, the old Saigon way.
