A 30-year canh bún gánh in the heart of District 1

Canh Bún Cô Lê began as a canh bún gánh on the sidewalk at 133 Hai Ba Trung, District 1 — over 30 years, every afternoon the gánh opens: the crab-riêu pot steams, the toppings fill the bowl (crab paste, stir-fried snails, blood cake, pork cake, tofu), the broth light and sweet. It sells out in 1–2 hours — late arrivals wait till tomorrow afternoon.

From around 16:00 the gánh is set up: the crab-riêu pot steams, the topping baskets line up, plastic stools gather on the sidewalk.
