Story

A mother-and-daughter bar

Upstairs from a humble beef-bowl eatery in alley 15B Le Thanh Ton — the heart of Saigon's Japanese quarter — Chinh opened a counter bar of her own, and pours her mother's recipe for every guest who comes through the door.

Chapter 01

Above the beef-bowl eatery

Alley 15B Le Thanh Ton is the heart of District 1's Japanese quarter. Mitsuboshi sits above a beef-bowl eatery in the alley — a plain wooden door, a staircase, and an eight-stool room.

Chapter 02

A recipe from Ba Ria

Chinh's mother makes shochu at home in Ba Ria — crystal sugar and sticky rice fermented in dried wild bananas. Chinh brought that recipe to Saigon and made it the centre of the counter bar that carries her name.

Saigoneer featured Mitsuboshi in its Hem Gems in 2026, and 49 Google reviews give the bar 4.9 stars — 45 of them five-star. The bar is a true mom-and-pop exception: fixed premises, owner-run, and a story no second bar has.
