The story

The xèo of Nguyen Thien Thuat

Bánh Xèo Nga is a sidewalk quán at 251 Nguyen Thien Thuat, District 3 — small, humble, and always smelling of the hot pan. The owner works the pans at the street front, pouring each golden-crisp crepe before guests' eyes. Nothing fancy — just crisp crepes, fresh greens, and a warm welcome.

The hand-painted “BÁNH XÈO NGA” sign hangs over the street front — a small, easy-to-find quán, pure Saigon sidewalk.

THE OWNER AT THE PANS

The theater up front

The owner pours the crepes right in front of guests — flame pans, the sizzle, turmeric in the air. Eating at Nga is watching a performance.

CRACKLING CRISP

Golden shell, full filling

The golden crackling shell with shrimp, pork, and bean sprouts — wrapped in greens, dunked in seasoned fish sauce.

“The crepe must crackle, the guest must see the flame.”Banh Xeo Nga, Nguyen Thien Thuat
