I'm from Huế, so I don't impress easily when it comes to soup. But Phở Hương Bình earned it.
This is a phở GÀ shop — chicken, not beef — run by one family since 1958. Three generations, one address on Võ Thị Sáu, no branches. The sign is yellow with red letters and a "SINCE 1958" that isn't marketing; it's a fact, worn like a seal. The signature is the chicken done right: chopped wings, the offal cuts, clear broth, the way chicken phở is supposed to taste when nobody's cutting corners. The board is explicit: lead with the chicken bowls, never a generic beef photo. The chicken is the soul of the menu.
Michelin gave it a Bib Gourmand three years running — 2023, 2024, 2025. Here's what I respect: the prices stayed 82–90k. No "starred" markup, no renovation into something unrecognizable, no suddenly calling it "elevated." The story is "Michelin-starred prices at street prices," and the discipline to keep it that way for three years of awards is rarer than the award itself. Don't turn it into fine dining on the page. It's a family shop that happens to be excellent.
The room is a daytime shophouse — bright, straightforward, family tables, open 6:30 AM to 9 PM. This is not a late-night place, and it doesn't pretend to be. You come for lunch or an early dinner, you eat chicken phở the way it's been made for nearly seventy years, you leave. No branches, no reinvention, no "elevated" anything. Just the same discipline, three Bib Gourmands, and prices that stayed honest.
